ci: Build testsuite for macOS
...
To make it work on macOS, do not add typelibdir to GI_TYPELIB_PATH.
While this change affects all the other jobs as well, it appears to
be of no consequence.

testsuite: Set GIO_USE_VFS=local everywhere

And do so centrally, not randomly in individual tests.
(Hopefully) fixes spurious test failures in CI.

sit right with asan, so just skip them in this

Mark the headless monitor test as failing

This is failing because I can't figure out
how to make wireplumber and pipewire work
in ci enough to let me add a new monitor :(
As usual, the test works fine locally.

These needed some updates and workarounds.
They are now part of the testsuite and can
be run like this:
meson test -Cbuild --suite headless
