wayland: Remove GdkWaylandDeviceData pointer in GdkWaylandDevice

It's the same than gdk_device_get_seat() nowadays. Also, rename the
usages of GdkWaylandDeviceData to GdkWaylandSeat in the functions
affected by the removal.
